What makes the Reshmi chicken so creamy ?
Ingredients like curd, cooking cream and cashew paste make the curry creamy as it is.
How is Reshmi chicken different from butter chicken ?
They both have creamy texture, however butter chicken has a little bit of sweet added to it unlike Reshmi chicken. Reshmi chicken masala marination is also a little different, few more spices are added to it while marinating.
Also, tomato paste is used in butter chicken while not in Reshmi chicken.

- Marinating The Chicken
500 gm Chicken
1 tsp Salt
1/4 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1 tsp Coriander Powder
1/2 tsp Cumin Powder
1 tbsp Ginger Garlic Paste
1 tbsp Lemon Juice
1/3 cup Curd
3 tbsp Cream
- Preparing Cashew Paste
2 tbsp Cooking Oil
12 pc Cashew
4 pc Garlic Cloves
1 pc Onion
3 tbsp Water
- Preparing Reshmi Masala
3 tbsp Cooking Oil
4 pc Clove
3 pc Green Cardamom
1 pc Bay Leaf
5 pc Black Peppercorn
1 tsp Cumin Seeds
1 pc Cinnamon Stick
1/2 tsp Garam Masala Powder
1 tbsp Dry fenugreek leaves
3 pc Green Chili Slits
2 tbsp Coriander Leaves
Directions
- Marinating The Chicken
- Into a large bowl, add chicken 500 gms, salt 1 tsp, turmeric powder 1/4 tsp, red chili powder 1/2 tsp, coriander powder 1 tsp, cumin powder 1/2 tsp, ginger garlic paste 1 tbsp, lemon juice 1 tbsp, curd 1/3 cup, cooking cream 3 tbsp – mix everything well and let it marinate for about 1 hour.
- Preparing Cashew Paste
- Into a heating frying pan, add cooking oil 2 tbsp, cashew 12 pcs, garlic 4 cloves, sliced onion 1 pc – let everything fry until light brown on high heat.
- Take out fried cashew and onions onto a plate and let it cool down a bit in room temperature.
- Put everything into a grinder, add water 3 tbsp and grind it to make a smooth paste.
- Preparing Reshmi Chicken Masala
- Into a heating pot, add cooking oil 3 tbsp, cloves 4 pcs, green cardamom 3 pcs, bay leaf 1 pc, black peppercorns 5 pcs, cumin seeds 1 tsp, cinnamon stick 1 pc – crackle them for few seconds.
- Add already prepared cashew onion paste into it – let it fry until light golden on medium to high heat.
- Add marinated chicken into it and let it roast for about 5 minutes on high heat.
- Cover and let it cook for about 10-12 minutes on medium heat.
- Add garam masala powder 1/2 tsp, dry fenugreek leaves 1 tbsp, green chili slits 3 pcs, coriander leaves 2 tbsp and stir it for few seconds.
- The Reshmi Chicken Masala is ready to serve.

- Grind the cashew onion into a fine-smooth paste.
- You can skip the cooking cream if you fall short of it.
