What is the difference between kheer and firni (Phirni)?

They are both rice puddings. But kheer is made with plain whole rice while the Firni is made with ground rice.

Where did Firni originate from?

Firni was first known to be made from old Kashmir. Now it’s famous across India and Pakistan.

Ingredients

  • 1/3 cup Rice Soaked

  • 1 ltr Milk

  • 1/2 tsp Cardamom Powder

  • 1 pinch Saffron Strands

  • 3/4 cup Sugar

  • 2 tbsp Nuts Chopped

Directions

  • Into a grinder, add soaked (1 hour soaked) rice 1/3 cup – grind into a course granular powder and keep aside.
  • Into a heating wok, add milk 1 litre and warm it for about 5 minutes on high heat, then add grind rice into milk.
  • Let it cook for about 10 – 12 minutes on medium to high heat – Keep stirring continuously.
  • Gradually, the rice starts cooking and the milk thickens.
  • After, add cardamom powder 1/2 tsp, saffron few strands – cook until mixture thickens.
  • Add sugar 3/4 cup and let it cook for about 7 minutes on medium to low heat – break the lumps with continuous stirring.
  • Cook the Firni until 3/4th done.
  • Add chopped nuts 2 tbsp and let it cook for about last 5 minutes on medium heat.
  • Serve it hot or refrigerate and serve it cold !

Notes

  • Grind the rice into granular form.
  • Break the lumps of the grind course rice before adding into the milk.
  • Continuous stirring while cooking Firni is important for best results.
